Launched originally as a once-a-month perk for hotel guests and Ensenada residents, the series known as “Atardeceres con Vino” (Sunsets with Wine) has quickly gained momentum. Its growing popularity has doubled its frequency—now taking place twice a month—inviting both travelers and locals to savor Baja’s renowned wines and cuisine as the sun sets dramatically over the Pacific. Each edition celebrates the artistry of winemaking and culinary innovation, transforming the hotel’s terraces into an open-air stage where flavors, aromas, and stories come together.
On August 15th, the hotel hosted one of its most memorable evenings to date, partnering with Bodegas La Cepa de Guadalupe, a boutique winery from the Valle de Guadalupe. The gathering unfolded at the hotel’s Terraza Caracol, an elegant space designed for sweeping views of the Ensenada coastline. Guests enjoyed a four-course pairing menu crafted by acclaimed chef Esteban Arellano, whose culinary vision embraces Baja’s identity through seasonal ingredients, seafood excellence, and innovative techniques.
The menu highlighted Baja’s bounty in creative expressions: fresh oysters and seafood paired with crisp whites, savory meats enhanced by bold reds, and farm-fresh produce transformed into vibrant, flavorful courses. Each dish was designed to elevate the wines of La Cepa, culminating in a tasting of Mezcal Sentir, a smoky, artisanal spirit that added a soulful closing note to the night’s experience. Guests described it as the perfect “final brushstroke on the canvas” of an unforgettable culinary journey.
What began as an additional amenity has now become a signature attraction, not only enriching the hotel’s calendar but also strengthening Ensenada’s reputation as a hub for food and wine tourism. “Sunsets with Wine” is more than an event—it’s a celebration of community, culture, and the sensory pleasure of sharing a table. The evenings attract discerning palates while also welcoming newcomers eager to explore Baja’s ever-evolving culinary landscape.
This September, the hotel will expand the concept further with “Atardecer Cervecero & de Sabor”, a special edition highlighting Baja’s craft beer scene. The upcoming event will feature Cervecería Aguamala, a brewery renowned for its creative, ocean-inspired beers. Chef Esteban Arellano will design a menu to pair seamlessly with Aguamala’s brews, while beer master Alfredo Viloria and sales expert Adriana Patrón guide guests through the tasting journey. Hosted by Ramón León at the BC Bistro & Cava, the evening promises surprises, gifts, and an intimate dive into Ensenada’s thriving craft beer movement.
